Отец - Роберт Джин Картер, мать - Джейн Элизабет Сполдинг. В семье пятеро детей (Ник старший, один брат и три сестры) кроме того у всех пятерых есть сводные брат и сестра. После рождения Ника семья переехала в город Тампа (штат Флорида). В начале 90х годов Ник проходил многочисленные прослушивания, снимался в рекламе. В 1990 году он появился в эпизодичной роли в фильме "Эдвард — руки-ножницы".
